BAKED EGGNOG CINNAMON RAISIN FRENCH TOAST

"A Holiday Breakfast"
Baked Eggnog Cinnamon Raisin French Toast
with Apple toppings and pure 100% Maple Syrup





It's the holidays! Let the feast of good foods begin.  When major holidays, such as, Christmas and New Year's come around many people tend to cook up a breakfast or dinner feast.  The holidays brings family and friends to the table.  So, why not cook something that has the taste of the holidays and utilize the food items that are in season, such as, eggnog.  Eggnog is mainly sold in stores during the holiday times.  Those who enjoy eggnog and do not know how to make it start stacking up and freeze it!

Waking up to the warm heavenly smell of cinnamon, nutmeg, maple syrup, apples, and eggnog will really get you jumping out of the bed and rushing down the stairs to the table.

French Toast Ingredients


Ingredients

  • 8-10 slices of your favorite cinnamon raisin bread
  • 3 large brown organic eggs with omega 3 - (if you do not have regular eggs will do)
  • 1 cup and 1/2 of eggnog of your choice
  • 1 teaspoon of pure vanilla extract - (use bourbon if you do not have vanilla extract)
  • 1/2 teaspoon of ground nutmeg
  • 1 teaspoons of ground cinnamon
  • some unsalted organic butter - (use coconut oil if you do not want to use butter) *To grease the pan to prevent sticking
  • two yellow apples, prefer organic - (conventional ok if you do not have but remove the skin and core)
  • 2 tablespoon of brown sugar - *optional
  • 1/2 of one lemon or lime
     

 Instructions
  1. Grease a baking dish or casserole with the butter or coconut oil.
Rub some unsalted butter or coconut oil

    2.  Stir together the eggs, eggnog, cinnamon, nutmeg, 1 tablespoon of brown sugar, and vanilla extract in a bowl.

     3.  Assemble the bread slices.
Assemble the bread to fit even if you need to cut in half
     
     4.  Pour a little of the egg liquid on top. Then assemble again. Repeat.

     5.  Slice and peel the apples. Squeeze some lemon or lime juice.  This prevents the apples from turning brown quickly and it gives a nice tang.

     6.  Top the bread with the apples, sprinkle the remainder of 1 tablespoon of cinnamon and sugar on top.  *Optional you can add some slices of the unsalted butter on top.

Ready to store overnight

     7.  Cover it and place it in the refrigerator.  Let the bread soak in the eggnog custard overnight.  If you cannot wait until the next day to cook it then let it set in refrigerator for 2-3 hours.  But, it's worth the wait for the next day.  This helps the liquid mixture absorb into the bread and the flavors mingle together.

     8.  Next day - preheat oven to 350 F degrees. 

     9.  Place the French toast casserole in the oven for about 45 minutes to 1 hour for a softer texture, or longer for a firmer, crisper texture, or until center is set and apples are tender .  Cover with foil for the first 30 minutes of baking, then remove it from the remaining baking time.


Ready to eat!
   
 Serve with maple syrup.

Good Morning!  Rinse and shine to a healthy breakfast before you start your day.  Breakfast is the most important meal of the day.  This is the first meal of your day that will give you the energy, allows you to focus, and sets the course of your metabolism.  Those that skip out on breakfast put their health at risk with an increase of overweight, obesity, and other aliments (heart disease and type 2 diabetes).  These aliments are the leading causes of death in Americans.

Plain organic Greek yogurt has no sugar added and no preservatives.  Greek yogurts has twice the protein than regular yogurt which is beneficial to keep you full.
Health tip:  Look for yogurts that does not have sugar or high intake of sugar.  Strive for yogurts with less than 8 grams.  Best to eat organic due to the hormones that are put in dairy.  Alternative to dairy yogurts are almond and coconut.  Plain yogurts are better because you can add your own toppings and you are controlling what you put in it.  Yogurts have an added bonus - probiotics.  READ LABELS

Cinnamon Mango Steel Cut Oatmeal with a hint of ground cardamom
 
    
A thumbs up approval for a nice warming breakfast to kick that gastrointestinal tract into high gear.  Making the delightful hot cereal is simple and easy.  You can use your favorite brand of steel cut oats and follow the directions of the cooking time - normally about 45 minutes to your desire consistency and texture.  I have used almond milk (any type of non-dairy milk, water, or milk of choice), frozen organic mango chunks by Trader Joes, ground cinnamon, green cardamom (removed the tiny black seeds from the pods and utilized my mortar and pestle to crushed the seeds), and 1 tablespoon of raw coconut nectar for some sweetness.  As an option choice you can add chia seeds, ground flax seeds, nuts, pumpkin seeds, or any nutritional topping.

                    Keep that tummy and intestinal tract HAPPY!
