BAKED EGGNOG CINNAMON RAISIN FRENCH TOAST

"A Holiday Breakfast"
Baked Eggnog Cinnamon Raisin French Toast
with Apple toppings and pure 100% Maple Syrup

It's the holidays! Let the feast of good foods begin.  When major holidays, such as, Christmas and New Year's come around many people tend to cook up a breakfast or dinner feast.  The holidays brings family and friends to the table.  So, why not cook something that has the taste of the holidays and utilize the food items that are in season, such as, eggnog.  Eggnog is mainly sold in stores during the holiday times.  Those who enjoy eggnog and do not know how to make it start stacking up and freeze it!

Waking up to the warm heavenly smell of cinnamon, nutmeg, maple syrup, apples, and eggnog will really get you jumping out of the bed and rushing down the stairs to the table.

French Toast Ingredients

Ingredients

  • 8-10 slices of your favorite cinnamon raisin bread
  • 3 large brown organic eggs with omega 3 - (if you do not have regular eggs will do)
  • 1 cup and 1/2 of eggnog of your choice
  • 1 teaspoon of pure vanilla extract - (use bourbon if you do not have vanilla extract)
  • 1/2 teaspoon of ground nutmeg
  • 1 teaspoons of ground cinnamon
  • some unsalted organic butter - (use coconut oil if you do not want to use butter) *To grease the pan to prevent sticking
  • two yellow apples, prefer organic - (conventional ok if you do not have but remove the skin and core)
  • 2 tablespoon of brown sugar - *optional
  • 1/2 of one lemon or lime

 Instructions
  1. Grease a baking dish or casserole with the butter or coconut oil.
Rub some unsalted butter or coconut oil

    2.  Stir together the eggs, eggnog, cinnamon, nutmeg, 1 tablespoon of brown sugar, and vanilla extract in a bowl.

Wisk away!

     3.  Assemble the bread slices.
Assemble the bread to fit even if you need to cut in half

     4.  Pour a little of the egg liquid on top. Then assemble again. Repeat.
Assemble slices and pour some of the egg liquid
     5.  Slice and peel the apples. Squeeze some lemon or lime juice.  This prevents the apples from turning brown quickly and it gives a nice tang.
Squeeze fresh lime or lemon on apples to prevent oxidation
     6.  Top the bread with the apples, sprinkle the remainder of 1 tablespoon of cinnamon and sugar on top.  *Optional you can add some slices of the unsalted butter on top.

Ready to store overnight

     7.  Cover it and place it in the refrigerator.  Let the bread soak in the eggnog custard overnight.  If you cannot wait until the next day to cook it then let it set in refrigerator for 2-3 hours.  But, it's worth the wait for the next day.  This helps the liquid mixture absorb into the bread and the flavors mingle together.

     8.  Next day - preheat oven to 350 F degrees.

     9.  Place the French toast casserole in the oven for about 45 minutes to 1 hour for a softer texture, or longer for a firmer, crisper texture, or until center is set and apples are tender .  Cover with foil for the first 30 minutes of baking, then remove it from the remaining baking time.

Ready to eat!

 Serve with maple syrup.

                                                                                                           Enjoy!

MERRY CHRISTMAS 2014

Wishing Everyone A Merry Christmas And Peace On Earth

A Christmas Prayer

Loving Father, Help us remember the birth of Jesus,
that we may share in the song of the angels,
the gladness of the shepherds,
and worship of the wise men.

Close the door of hate and open the door of love all over the world.  Let kindness come with every
gift and good desires with every greeting.  Deliver us from evil by the blessing which Christ brings,
and teach us to be the merry with clear hearts.

May the Christmas morning make us happy to be thy children, and Christmas evening bring us to
our beds with grateful thoughts, forgiving and forgiven, for Jesus' sake.

Amen.

As an annual tradition my husband and I take three charity bells off the Christmas tree at the Church of the Blessed Sacrament.

Let us not forget the less fortunate during the holidays

The holiday times can be difficult for some so check up on those who are feeling the mood blues.

Reminder here are some ideas that can perk those moods up...

Keep citrus fruits around
Keep a fresh Cypress plant, pine tree, or wreath around

Melanie's Mardi Gras Christmas tree

And decorate your environment around you.  Holiday decorations create a warm comfortable environment.

HAPPY THANKSGIVING!

"Wishing Everyone A Peaceful Thanksgiving"

A day to give thanks
and
bring together family and friends to the table

O Gracious God,

We give you thanks for your overflowing generosity to us.  Thank you for the blessings of the food we eat and especially for this feast today.  Thank you for our home and family and friends, especially for the presence of those gathered here.  Thank you for our health, our work, and our play.  Please send help to those who are hungry, alone, sick, and suffering war and violence.  Open our hearts to your love.  We ask for your blessing through Christ your son.  Amen.

MERRY CHRISTMAS!

Happy Holidays

Charitable Christmas Tree
at Church of The Blessed Sacrament
New York

Christmas is a special season because Jesus Christ was born as God's gift to us all.  Let us not forget the unfortunate during this time.  Every year we pick up bells off this tree and grant the wish of a young child.

May this Christmas brings you hope and peace to you all.  May God's richest blessings continue with you through the coming year.

Viewer, Gregory, sent in another picture of his fishing experience.  This time he caught a Trout!  He spent his Thanksgiving holiday fishing- enjoying what he loves best.  As you can see he is having a relaxing time.  Let us all take note when we feel the "holiday craze" or "work craze" take a break and do something enjoyable to relieve the stress.  Life is too short to be stressed out.

THE DAY TO GIVE THANKS

Happy Thanksgiving!

Thanksgiving is an annual national holiday in America.  A day marked for giving thanks for the blessing of the harvest and celebration of kindness.  A time when families and friends come together at the table where there is great food for the soul.  I'm thankful for having a roof over my head, job, food at the table, health, family, and being able to see another bless day.

Since this is the day to feast try not to overly stuff your bellies.  Let us revisit the post -
